Random blog day boo yah. As you should know Fridays is random blog day were we talk anything and everything and pretty much run with it. Today's blog is on a Recipe for Caramelised Onions.


I know that a Recipe for a condiment is a little unusual for a Friday blog but here we go, last week I was feeling rather a little bleugh, and going through some tidying and organisation of our kitchen as I do and realised our onions were beginning to turn as in some had sprouted roots and had become useless for cooking. As such I didn't want to loose the majority bag over five onions so feeling a challenge, I looked up a recipe for Caramelized Onions, sorted, pealed and chopped the remaining onions and cooked them off as the recipe dictated. They were very tasty and used later on for dinner...we had Hot Dogs. Luckily I had a small clean jar and put the remaining onions into it and store in the fridge, Its very good for a week. The Recipe is here if you wish to use it.


Caramelized Onions


Ingredients:

2-3 TBSP Olive Oil

3 large Onions (Red or White) Sliced or chopped

Pinch of Salt


Extras:

2-3 TBSP Soft Brown Sugar (White is good Alternate)

1-2 TBSP Balsamic Vinegar (Malt good Alternate)


Method:

  • Add Oil to a pan and heat over a low heat.

  • Add onions and generous Pinch of salt and cook slowly for 30-40 mins stirring occasionally.

  • Occasionally add splash of water as not to have the Onions catch.

  • After 30-40 mins when it becomes a golden caramel colour, Add the sugar and Vinegar and stir in.

  • Cook on a low heat for a further 5 mins until the mix is sticky and both the sugar is dissolved and the vinegar is reduced.


  • Can store in fridge for up to a week.
